What does a Filipino do when he can stock up on canned goods? Buy corned beef!
There are so many stories about corned beef and the Pinoy; like what does an immigrant do when he is able to send something to his family back home? Send a Balikbayan box loaded with canned corned beef – as if we don’t have any here in the Philippines!
But I beg your pardon – imported corned beef has a magical charm of it’s own. I can understand this because my good friend Twin Milette Orosa likes Ox and Palm corned beef, and I agree, it does taste oh so much better.
So now in this time of quarantine cooking, what do we do with all that corned beef? Let’s do Corned Beef Hash Pinoy Style!
Corned Beef Hash Pinoy Style
Quick and easy meal making use of canned corned beef with potatoes and onions. Best served with fried eggs and steamed rice.
Ingredients
- 1 can of corned beef - big or small
- 3 tablespoons cooking oil
- 1 tablespoon minced garlic
- 1 onion - sliced thinly
- 200 - 300 grams of potatoes - peeled, sliced julienne or in small cubes
- ½ cup broth
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- ¼ teaspoon oregano (optional)
Instructions
Place a wok or frying pan over a medium-low heat.
Pour the cooking oil and add the garlic and onions and saute.
Saute for about 2 minutes.
Now add in the sliced potatoes and continue to saute for about 3 minutes.
Pour in the broth and let simmer for about 2 minutes.
Season with salt and pepper and oregano if desired.
Now add the corned beef and continue to simmer till the potatoes are tender.
Adjust the seasonings if desired.
Notes
Serve hot with plain rice or garlic rice. Goes well with a fried egg or scrambled egg.
